Delicious in Italian and US Southwestern cuisine but practically universal, this salt complements garlic, onion and shallots, artichokes, butter, olive oil. It adds salinity, acidity and depth to sauces that feature red wine and stock, but also works well in lighter vinaigrettes and sauces.
